Description
STATEMENT OF WORK 1. References: a.AR 30-22, The Army Food Program b.DA PAM 30-22, Operating Procedures for the Army Food Program c.AR 40-25, Nutrition Standards and Education d.OHARNG Food Service SOP 2. Project Scope: Provide full food service catering in order to provide daily hot breakfast and evening meals (Dinner) in support of the Ohio Army National Guard. The daily menu will be in accordance with the above references. The contractor will provide a cyclic menu which will include required components of a nutritionally balanced meal: A. Evening Meal minimum requirement: "One meat entree, one vegetarian entre, appropriate sauce or gravy to accompany entre, one soup either cream or broth based, one starch, one vegetable, standard salad bar choices, a grain item (bread or rolls), fresh fruit, a daily salad, desert, condiments, and beverages, and 1% milk. B. Breakfast minimum requirement: "Eggs (scrambled), one breakfast meat, one hot cereal (grits, oatmeal, farina), assorted grain items (bread-biscuit or toast), fresh fruit, one pastry (donuts, cinnamon rolls, etc), one grilled item (waffles, pancakes, French toast), one potato choice, condiments, coffee, 100% juice, assorted cold cereal,beverages, and 1% milk. 3. Period of Performance: 4 June 2007-27 June 2008. Breakfast serving time: 0500-0700, Dinner serving time: 1800-2000. The first meal will be dinner on the 4th, and the last meal will be breakfast on the 27th of June 2008. 4. Caterer will be self-sustaining to include fuel, pots, pans, cooking utensils, generator, serving utensils, tentage, lighting, tables, chairs, grease disposal, and hand-washing facilities that offer hot and cold water. Caterer must provide anenclosed truck for trash and personnel to transport the trash to the base compactor at least once daily. Card-board boxes must be broken down flat and separated from trash that will be fed into the compactor. Required serving line throughput is approximately 500 soldiers per 30 minutes. 5. Mobile kitchen trailers may be brought in. Water (60 ft from spigot) is accessible from building #320M. Electric is not. Gray-water disposal is available in a nearby man-hole cover. Vendor must provide ownhose. 6. Price quote: Include paper-gear (plates, eating utensils, cups) and cleaning supplies in your price quote. 7. A shower building is available if needed. 8. Physical Location UNDECIDED between: Parking lot of 200 block or the 500 block (approximately 2 adjacent football fields), Camp Grayling, Michigan 49738. 10. Payment ESTIMATE: $14.00 per soldier per day. 1700 soldiers X 24 days X $14.00 = $ 571,200.00. A final headcount will be provided by 25 May 2008-billing should be adjusted accordingly.
