Description
The Kansas City Commodity Office (KCCO), Domestic Procurement Division, 6501 Beacon Drive, Stop 8718, Kansas City, MO 64133, is seeking qualified companies to produce and/or provide Tortilla Flour and Whole Wheat Tortilla Flour packaged in 50 pound bags. Refer to the specifications indicated below: TORTILLA FLOUR PRODUCT DESCRIPTION: Wheat flour is the food prepared by grinding and bolting cleaned wheat other than Durum wheat. To compensate for any natural deficiency of enzymes, malted barley flour maybe added. It conforms to US Standard of Identity for Wheat Flour (21 CFR Part 137). INGREDIENT STATEMENT: Wheat flour, Bleached, Malted Barely flour, Enriched (Niacin, Reduced iron, Thiamin mononitrate, Riboflavin and Folic acid. ANALYTICAL: Moisture 14% Max. Ash.520 % Max. Protein 12.0% +/-.3 Falling Number 275-350 Farinograph Abs 61.0 % +/- 2 Peak Time, Min. 5-8 Stability, Min. 11-17 MTI, B.U. 30-45 MICROBIOLOGICAL: Standard Plate Count50,000/g Mold/Yeast 1500/gm max.
