Statement of Work Oven and Steamer The Northern Arizona VA Health Care System (NAVAHCS) has a need to purchase an electrical combi oven for cooking food for our veteran patients. The oven is needed for food preparation and batch cooking in the domically area. Our Veteran satisfaction score in the area of hot food temperature has been impacted due to the unavailability of this mission critical direct patient care equipment for batch cooking. Operational needs Injection steam system where water is injected onto the heating elements for steam cooking and it is distributed by the oven fan. Easy to use touchscreen control and easy to operate even for inexperienced kitchen staff. Multiple cooking modes like hot air, combi Smart, Combi Optimal, retherm steaming, low-temp steaming, forced steaming, proofing, preheating. The ability to store recipes with minimal steps Manual or automatic cools and automatic humility pulsing. External core temperature probe Capability for recording and documenting production duration and preparation temperatures and core temperatures Ovens also must have the capabilities to work independent of each other if one is not in use or is cooking a different product. Have a reversible 9 speed fan for optimum baking and roasting results and ability to cook overnight. Cleaning with automatic wash cycles with little to no exposer to staff of cleaning chemicals. Water and chemical cleaning hook-ups Construction 304 stainless steel exterior and interior Dual pane tempered viewing window with hinged inner glass for easy cleaning. Insulated to save on energy 2 (50mm) fixed drain in the bottom of the center of cavity Door mounted drip tray, automatic door stops in a position of 110 degrees and180 degrees for easy loading and unloading of food. Two step safety door latch the first is to stop the fan Warranty One year for parts and labor for oven. Plus ability to purchase extra year of parts and labor for oven.
