Norfolk, Detachment Washington has a requirement to purchase a Donut
Making System for the United States Naval Academy. The Donut making
system shall be able to produce a minimum of 100 dozen raised donuts
and 120 dozen cake donuts per hour. The donut making system shall be
capable of all production operations with a maximum of four (4) Dessert
shop personnel, during the normal staff schedules, in a six hour
period, for a production of approximately 10,000 donuts. The donut
making system will consist of the following: 1) A Thermostatic Proofer
with an automatic conveyor system and a basket type outfeed assembly
which raises and lowers for easy positioning of proofer to fryer. The
proofer shall have a separate electronic temperature and humidity
control, automatic water feed. (1) Electric Fryer, with stainless steel
kettle and cabinet (1) Universal Fryer Conveyor with a variable speed
frying control with three (3) 3/4 inch flight pockets. (1) Electronic
Cake Donut Depositor, with one (1) 3/4 inch stainless steel plunger and
cylinder assembly. (1) Automatic Shortening Melter and Leveler. (1)
Power Distribution Kit providing for four (4) 110V outlets and two (2)
220V outlets for companion equipment. (1) Accumulating Sweep Conveyor
capable of providing for cooling and transfer of donuts to the
automated glazing station. (1) Automatic Glazing unit with a variable
speed control and a glaze pump assembly. (1) Cooling Conveyor with
fan-forced air. (1) Shortening Filter, electric. (1) Filter Pads
(dozen), (1) Moline Sheeter Donut Cutting Station; Installation and
Training, and two sets of Technical Manuals. The system shall be
capable of utilizing pre-existing 280/240V, 60Hz, 1 or 3 phase and/or
110/120V, 60Hz, 1 phase power supply. This requirement is unrestricted.
Award will be to the lowest, technically acceptable, responsible
