Division based in San Antonio, Texas is interested in contracting
(partnering) with a company that specialize in Food, Beverage,
Hospitality Management Training to assist, supplement the pre-opening,
opening, and follow-on training requirements for kiosk, quick-service
and full-service, casual-theme restaurants, and to assist with the
training requirements of the Core Catering Program. Contracted training
teams, of 2-3 trainers, a front- and back- of the house, food and
customer service trainer, and a management (administration,
organization, catering sales) and/or bar, lounge, and entertainment
trainer will supplement the Air Force teams during the pre-opening and
opening of the restaurants for a period of 5-10 days on-site. The Air
Force projects opening 75 restaurants and implementing the Core
Catering Program in 100 clubs over the next 3 years. In addition, to
the opening training requirements, requirements exist for follow-on
compliance and refresher training ateach location, frequency to be
determined. All trainers must have demonstrated and well-documented
performance in a quick-and casual food service and catering. Food
trainers must possess good, hands-on food production, preparation, and
presentation skills and abilities. American Culinary Institute
certification as a Certified Chef or Certified Cook is desirable. All
trainers must have good communication, motivation, training, and
organizational skills and techniques. All trainers must be willing to
understand/accept corporately established standards, procedures, and
requirements and train accordingly. Air Force developed standard guides
and procedures are outlined in the Air Force Signature Brand Operation
Guides, FoodTrak generated standardized recipes, and in accordance to
the principles, procedures, and standards established in Professional
Cooking (Gisslen). Additional references used to support training are
"The Little Brown Book of Restaurant Success," and Pencom's "Service
That Sells" and "Quick Service That Sells!" This Request For
Information (RFI) is for planning purposes only and shall not be
construed as a request for proposal or as an obligation on the part of
the Government to make any follow-on acquisitions. The Government does
not intend to award a contract on the basis of the RFI or otherwise pay
for the information solicited. No entitlement to payment of direct or
indirect costs or charges by the Government will arise as a result of
submission of responses to this RFI and Government use of such
information. No response will be forthcoming to the responents of this
