Description
The U.S.P. & F.O. at Lansing, MI is issuing this request for proposal for full food services. The full food service contract will be performed in Grayling, MI. The successful contractor will be required to provide all personnel, supervision, transportation, subsistence and materials necessary to perform full food services. Contractor tasks include, but are not limited to, dining facility management, all cooking and food preparation, ordering of subsistence, serving and replenishing food, cleaning facilities and utensils, preparing vegetables and fruit for salad bar, bussing dining area tables, cashier services, operation, maintenance, and repair of food service equipment. This facility is dedicated to providing full food service to include carryout and grab-to-go while meeting the nutritional needs of personnel who qualify to use the facility. The contract period of performance will be for the following time frame: 01 June 2001 through 31 August 2001. These services are to be performed at Camp Grayling's dining facility which has a building size of 3,421 square feet and maximum seating capacity of 120 personnel. Meals required to be performed by the contractor include Breakfast, Lunch and Dinner. The Dining Facility hours of operation will be, Breakfast 6:00 to 8:00 a.m., Lunch 11:00 a.m. to 1:00 p.m., and Dinner 5:00- 7:00 p.m.. While there are not any firm estimated numbers the Government does guarantee a minimum number of 25 per meal. The actual number could be as low as 0 personnel however the government will reimburse for 25 persons. The average number of meals served last year were Breakfast 41 persons, Lunch 58.5 persons and Dinner 43.5 persons. Again these numbers are estimates and are for informational purposes only. The contractor shall provide a variety of prepared foods which meet military standards. Some examples of this food will include as follows: Breakfast Eggs to order, Omelets to order, various meats, hash brown potatoes. Lunch -- - Hot and Cold sandwiches, French fries, potato chips, salad/soup bar. Dinner -- Hot sandwiches, spaghetti, pork chops, vegetables, gravies/sauces and salad bar. Past performance is the other evaluation factor that will be used along with the Contractor's Quality Assurance Plan.
